The Possession then spends 12-15 months in French oak barrels of around 30-40% new oak with an aim to put it through malolatic fermentation in spring once the wine naturally starts to warm up. Bottling the wine around 12 months before release allows the wine time to soften ready to be drunk with flavours of red berry, dark plum and earthy notes, but cellaring for 5-7 years will also suit this wine.
